But, why not use the grill? Eggplant, zucchini, squash, asparagus are all great grilled! A little wood smoke added really shows up with Eggplant, Zucchini and Squash. For the asparagus, just lightly toss with olive oil, and salt them. Grill to they just begin to soften, pull them off, and I like to either drizzle on a little bit of a really good balsamic (or take a cheap balsamic, and reduce it on a burner low and slow, until it becomes the consistency of thick maple syrup.) Another great addition to the grilled asparagus is some grated parmigiano reggiano.

The Big Green Egg is definitely overkill for vegetables, but some day you may come to your senses! :) LOL
